Baby steps.

I officially consider myself to be making positive baby steps in the environmental world! How you might ask? Well, I have finally managed to influence my otherwise stubborn family members to make smarter choices. When I came home from work last night, my mother told me that she did her best to make two more eco-friendly choices when shopping today. The first, that instead of grabbing the standard lysol disposable wipes that she always grabs, she instead went for the fully biodegradable cleansing wipes that use more natural detergents. YAY! Second, when buying eggs for the family (unfortunately my dad eats like, three eggs a day!) she consciously made the choice to buy eggs in the recycled cardboard containers instead of the styrofoam containers (which are evil). I wasn't even there to nag her about these choices! Just by being more environmentally conscious myself, I influenced her to make better choices. I'm hoping this is a positive sign of things to come. I'm pretty jazzed right now, if you couldn't tell! I'm sitting here eating my vegan burrito in perfect bliss.

OOH! Speaking of my vegan burrito: "Amy's" brand frozen burritos (specifically the bean & rice and breakfast burritos) are really amazing! There is a cheddar cheese one that I haven't tried, so I can't confirm whether it's real cheese or vegan cheese. But I can personally vouch for the ones I've tried. One of the things I've found challenging about following a vegan diet is finding new "convenience" type foods. If I need to eat something filling in a hurry, it's nice to have vegan alternatives like these :) Nice thing too is they're made with mostly organic ingredients which is an added bonus!
